This Sheet Pan BBQ Chicken is your weeknight dinner hero—juicy chicken, caramelized veggies, and sweet pineapple all roasted together on one pan. Less mess, more flavor, and no stress.

Sheet pan meals are basically my love language. Toss everything on a tray, pop it in the oven, and out comes dinner—with barely any cleanup. But this one's extra special. It’s a sweet and smoky mix of barbecue chicken, tender broccoli, caramelized sweet potatoes, and juicy pineapple.
I first whipped this up on a busy night with random leftovers in the fridge—and it turned into a go-to meal that my whole family requests on repeat. It’s colorful, wholesome, and naturally gluten-free too.

🔪 How To Make Sheet Pan BBQ Chicken

- Step 1: Preheat the oven to 400 degrees F. Line a baking pan with foil and set aside. Salt and pepper both sides of the chicken breast and place them in the middle of the baking sheet. Liberally brush BBQ on both sides of the chicken.

- Step 2: Chop the broccoli (leave in large pieces), large sweet potatoes, and onion. In a medium-sized bowl, add sweet potato, pineapple, and onions. Toss with 1 tablespoon of olive oil, salt, and pepper. Place on one side of the baking sheet. In that same bowl, add the broccoli. Toss with the remaining 1 tablespoon of olive oil, salt, and pepper.

- Step 3: Add broccoli to the other side of the baking sheet. Bake for 25 minutes. Chicken will be done when it reaches 165 degrees F. Remove the chicken and sweet potatoes from the baking sheet and set aside. Set the oven to broil.

- Step 4: Spread out the broccoli on the baking sheet. Using the bottom of a glass, press each floret to flatten. Drizzle with lemon juice and place the Parmesan cheese on top. Broil for about a minute until the cheese has melted and begins to crisp. Shred the chicken, plate your dish, and enjoy!
💡Hint: Preheat your sheet pan while the oven warms—this helps the veggies caramelize and roast more evenly.
