- Step 1: Cook the bacon in a medium skillet over medium-low heat, until crispy. When the baking is complete, set it on a paper towel to remove the grease. Then, using your hands or a fork, break the bacon into little pieces.
- Step 2: Slice the potatoes thinly and wash them thoroughly. Remove the chives from their stems and dice them. Lightly brush each of the potato slices with olive oil. Arrange potatoes in a single layer in the air fryer basket. Season the potatoes with salt and pepper
- Step 3: Cook at 400 degrees for 17-18 minutes, lightly shaking the basket once halfway through cooking. Top each of the potatoes with cheese, then bacon, then a few chives.
- Step 4: Bake in the air fryer for an additional 2 minutes. Remove your cheese and bacon-sliced potatoes from the air fryer, and serve hot!
