Cook the bacon in a medium skillet over medium-low heat, until crispy. When the baking is complete, set it on a paper towel to remove the grease. Then, using your hands or a fork, break the bacon into little pieces
Slice the potatoes thinly and wash them thoroughly
Remove the chives from their stems and dice them
Lightly brush each of the potato slices with olive oil
Arrange potatoes in a single layer in the air fryer basket
Season the potatoes with salt and pepper
Cook at 400 degrees for 17-18 minutes, lightly shaking the basket once halfway through cooking
Top each of the potatoes with cheese, then bacon, then a few chives
Bake in the air fryer for an additional 2 minutes.

Use thin sliced potatoes in the air fryer. Thin slices cook faster and more evenly than thick slices.If you want extra crispy potatoes, preheat your air fryer for 3-5 minutes before adding the potatoes. This will help them to cook up nice and crispy.For extra flavor, you can add some seasoning to the potatoes before cooking. Try using garlic powder, onion powder, or even some dried herbs.
