What Goes Into Turkey Enchiladas?

You’ll need just a few simple ingredients to make the Air Fryer enchiladas.

  • Olive Oil: Used for frying, it adds a subtle richness to the dish.
  • Yellow Onion & Minced Garlic: Are the flavor foundations, adding a savory depth to the enchiladas.
  • Ground Turkey: A lean protein that keeps the dish healthy and satisfying.
  • Ground Cumin, Chili Powder & Ground Pepper: Give the turkey a warm, smoky flavor with a hint of heat.
  • Tomato Paste: Intensifies the tomato flavor and thickens the sauce.
  • Black Beans: Adds heartiness and fiber, contributing to the filling’s texture.
  • Knorr Caldo de Pollo: Enhances the overall savory flavor.
  • Lime Juice: Adds a fresh, citrusy tang that balances the spices.
  • Yellow Corn Tortillas: Add a nice texture and traditional taste.
  • Shredded Cheese: Melts over the top, adding a creamy, rich layer of flavor.

Use These Ingredients As Substitutes

  • Best Cheese: I have used shredded cheese, but you can also choose to use sharp cheddar cheese or cream cheese instead if you want to. Just make sure you spread the cream cheese evenly on the surface of the tortillas.
  • Enchilada Sauce: Don’t have the green enchilada sauce that the recipe calls for? You can make do with homemade enchilada sauce too! I also think using red enchilada sauce can be a great idea- it can add such a nice color to the dish.
  • Tortillas: I have used corn tortillas for this recipe, but you can also choose to use flour tortillas or any other gluten-free tortillas if you want to.

How To Make Air Fryer Enchiladas

Once you have your ingredients ready, here’s what you’ll need to do to make the enchiladas in the Air Fryer.

Step One: Add oil to a skillet over medium-high heat. Dice the onion and add it to the skillet and sauté for 6-8 minutes until the diced onions are translucent.

Step Two: Add the ground turkey and chop it up. Add the spices and tomato paste and mix.

Step Three: Add the canned black beans and Caldo de Pollo, and mix. Light coat the pan in enchilada sauce. Microwave the corn tortillas for 1 minute. They will be hot but as they cool, they will be pliable enough to roll and not break.

Step Four: Add a heaping tablespoon of meat and beans to the center of the tortilla and roll. Dab a little enchilada sauce on the inside lip of the tortilla so as you roll flour tortillas over the outside lip, the sauce keeps it rolled close.

Step Five: Fill the pan with enchiladas, then add more of the remaining enchilada sauce to the tops of the enchiladas. Cook at 375°f for 6-8 minutes, add cheese, and then cook for 3 minutes.

Step Seven: Let cool then enjoy topped with sour cream, chives, and or cilantro.

While making the Air Fryer enchiladas is super easy, you might want to take note of these tips and tricks too.

  • When you make Air Fryer enchiladas, remember to line Air Fryer basket with some parchment paper before you layer the tortilla rolls.
  • Stick to a thin layer of the enchiladas to get that perfect crisp texture you’re looking for.
  • If you’re using cooked chicken breasts, just remember to season it well before you load it into the tortillas. Using seasoned chicken will ensure that your enchiladas are full of flavor.

Enchilada Fillings

  • I have used ground turkey and Black Beans as the key ingredients for the filling, but you can also experiment with other toppings when it comes to making these Air Fryer enchiladas.
  • By swapping the turkey with Shredded Chicken breasts or cooked chicken, you can easily whip up some Air Fryer chicken enchiladas. To cut down the cooking time, you can just use some Rotisserie Chicken.
  • Ground Beef also makes for an excellent filling for the enchiladas. To season these, you can use a bit of Taco Seasoning.
  • You can also add Mexican Rice and your other favorite Mexican toppings to the Enchilada Mixture.

How To Store Leftover Enchiladas

Air frying enchiladas make them nice and crispy, and the cheese melts and coats the enchiladas beautifully.

  • Refrigeration: Transfer the enchiladas to an airtight container or cover the baking dish with plastic wrap. Refrigerate within 2 hours of cooking. Consume within 3-4 days for optimal freshness.

  • 2 Teaspoon Olive Oil
  • 1 Large Yellow Onion Diced
