🔪 How To Make Air Fryer Enchiladas
- Step 1: Add oil to a skillet over medium-high heat. Dice the onion and add it to the skillet and sauté for 6-8 minutes until the diced onions are translucent.
- Step 2: Add the ground turkey and chop it up. Add the spices and tomato paste and mix.
- Step 3: Add the canned black beans and Caldo de Pollo, and mix. Light coat the pan in enchilada sauce. Microwave the corn tortillas for 1 minute. They will be hot but as they cool, they will be pliable enough to roll and not break.
- Step 4: Add the ground turkey and chop it up. Add the spices and tomato paste and mix.
- Step 5: Fill the pan with enchiladas, then add more of the remaining enchilada sauce to the tops of the enchiladas. Cook at 375°f for 6-8 minutes, add cheese, and then cook for 3 minutes.
- Step 6: Let cool then enjoy topped with sour cream, chives, and or cilantro.
💡 Hint: To keep your enchiladas from unrolling in the air fryer, place them seam-side down and don’t overfill. Warming the tortillas beforehand helps them stay pliable and easier to roll without cracking.
