Yes, you can freeze sauerkraut, whether it's homemade sauerkraut or canned sauerkraut. However, freezing impacts the beneficial bacteria that give sauerkraut its probiotic benefits. These lactic acid bacteria, produced during the lactic acid fermentation process, are sensitive to freezing temperatures. While freezing preserves the fermented cabbage and its distinct tangy flavor, the health benefits provided by live probiotics may diminish.
Why Freeze Sauerkraut?
Freezing sauerkraut can extend its shelf life and prevent waste, especially if you have large quantities or want to keep some for future use. The freezing process does not significantly affect the lactic acid fermentation that gives sauerkraut its distinctive sour taste, making it an excellent option for sauerkraut storage.
How Does Freezing Affect Sauerkraut?
Freezing sauerkraut can damage or kill the live probiotics, reducing the probiotic benefits associated with fresh sauerkraut. The freezing process can also alter the texture, making it less crisp. While the flavor remains intact, but the live probiotics may no longer be active, especially if you use it in cooked sauerkraut recipes.
How To Freeze Sauerkraut
Preparing for Freezing
- Homemade Sauerkraut: Ensure the sauerkraut is well-fermented and the lactic acid bacteria have done their job. This will keep the raw cabbage from spoiling during the freezing process.
- Canned Sauerkraut: If using canned sauerkraut, make sure to drain any excess liquid before freezing to prevent freezer burn.
Freezing Process
- Use Freezer Bags: Transfer the sauerkraut into freezer bags or airtight containers. This helps prevent freezer burn and preserve the quality of the sauerkraut.
- Portioning: Divide the sauerkraut into portions that are convenient for future use. This is especially helpful if you only need a small amount at a time.
How To Thaw Frozen sauerkraut
