Indulge in the delightful fusion of sweet and tart with our Gluten Free Fruit Cobbler, a tantalizing twist on the classic dessert. Bursting with juicy cherries nestled beneath a golden, cakey topping, this delightful treat promises a symphony of flavors in every bite.

When I first started gluten-free baking, cobblers were one of the trickiest recipes to get right. The goal, a soft, biscuit-style topping that holds its shape, without the grainy or gummy texture some blends can bring. After testing countless flours, fruit combinations, and topping techniques, this version finally nailed it. Whether you're using sweet cherries, peaches, or a berry medley, the topping bakes up golden and fluffy every time.
And yes—this gluten free cherry fruit cobbler is every bit as comforting as the traditional kind, just without the wheat.

💖 Why This Recipe Works
- Gluten-Free Adaptability: This easy fruit cobbler recipe uses gluten-free flour, making it perfect for anyone with gluten sensitivities or celiac disease.
- Fruit Versatility: It lets you use different fruits, so you can pick your favorites or what's in season.
- Texture Contrast: The combination of a juicy fruit filling and a crispy topping gives a satisfying mix of textures.
⭐ Star Ingredients
- Cherries or Mixed Berries: I love using cherries or a blueberry blend. They offer the right balance of sweetness and tartness for that juicy cobbler base.
- Tapioca Flour: This is my go-to thickener. It keeps the fruit filling glossy and cohesive without getting too stiff or gluey.
- Gluten-Free Flour Blend: I’ve tested this with both Bob’s Red Mill All-Purpose (bean-based) and 1-to-1 (rice-based) blends. Each works—just with slightly different textures (see my flour breakdown below).

📖 Substitutions & Variations
- Apple Cinnamon Cobbler: Use tart apples and add a dash of cinnamon for a cozy fall dessert.
- Peach Cobbler with Almond Topping: Sub half the flour for almond meal for a nutty, golden crust.
- Mixed Berry Cobbler: Use a combo of blueberries, strawberries, raspberries, and blackberries.
- Vegan-Friendly: Use coconut oil or vegan butter, almond milk, and a flax egg.
- Refined Sugar-Free: Replace white sugar with coconut sugar or maple syrup.
- Grain-Free Version: Use almond flour and arrowroot starch for a paleo-style topping.
🔪 How To Make Gluten Free Fruit Cobbler?
- Cook the fruit: In a saucepan, combine fruit (like cherries or blueberries), sugar, lemon juice, tapioca flour, and water. Simmer for 15 minutes until thickened.
- Preheat the oven: Set it to 375°F. Pour the thickened fruit mixture into a 3.5-quart casserole dish.
- Make the topping: In a bowl, mix gluten-free flour, baking powder, sugar, butter, egg, and milk. You can spoon it over in dollops or gently spread it with wet fingers.
- Bake: Bake uncovered for 30 minutes until the topping is golden brown and slightly crisp.
- Cool slightly and serve: Let it sit for 5 minutes. Serve warm with vanilla ice cream or whipped cream.

💡Hint: If your topping dough is sticky, wet your hands or use a spatula to gently flatten it. It doesn’t need to cover the entire surface.

👩🍳 Expert Tips
- Test your flour: Bob’s Red Mill 1-to-1 has the best flavor, while the All-Purpose GF (blue label) offers better structure but a faint bean taste. Pick based on your preference.
- Use cold butter: It helps form little pockets of steam for a fluffy, tender crust.
- Bake uncovered: Don’t be tempted to cover with foil—the topping needs exposure to crisp up properly.
💭 FAQs
I use Bob's red Mill All-Purpose gluten free baking flour. Here are the pro's and con's of the Blue label Flour:
This flour won in the texture department. It definitely holds together much better isn’t painfully sticky. It’s pretty easy to simply pour this on top of your cobbler, spread it out a bit with a spatula. It tastes like beans (probably only to me).
This flour is made from garbanzo fava beans ingredients: garbanzo bean flour, potato starch, tapioca flour, whole grain sweet white sorghum flour, fava bean flour.
The flour tastes strongly of raw beans when uncooked, but the bean flavor diminishes after cooking, though a hint may linger. Since you won't eat the cobbler topping raw, if it doesn't taste beany to you and you're fine with occasional beans, choose this flour for the cobbler's texture.
Yes! No need to thaw. Just add a few extra minutes to the simmering time so the filling thickens properly.
Not quite—but you can make a grain-free version by using almond flour, arrowroot starch, and coconut sugar.
Definitely. Just make sure your skillet is oven-safe and preheated before adding the filling for extra crisp edges.
