This Vegan Chia Pudding is a creamy, guilt-free breakfast or snack that's packed with nutrients. With just a few ingredients, it’s easy to make and totally delicious!
1Cup Soy MilkUnsweetened (Or Any Plant-Based Milk Of Your Choice)
1tablespoonMaple Syrup
½teaspoonVanilla Extract
1Cup Vegan Yogurt Unsweetened Or Vanilla-Flavored
½CupFresh Blueberries For Mixing With Yogurt
½CupFresh BlueberriesFor Topping
Instructions
In a bowl, mix chia seeds, almond milk, maple syrup, and vanilla. Stir well.
Wait 5 minutes, stir again to break up clumps. Cover and refrigerate for 2 hours or overnight until it thickens like pudding.
Put the blueberries and yogurt into a blender or food processor.
Blend until smooth or to your desired consistency.
Spoon some of the blueberry-yogurt mixture into the bottom of serving cups.
Layer the thickened chia pudding on top of the blueberry yogurt mixture.
