Instructions
Cut each cucumber in half lengthwise, scoop the seeds and flesh out from the center by using a small spoon.
Smooth a tablespoon of hummus into each cucumber half.
Top each cucumber boat half with the red onion, tomatoes, grilled chicken, and feta cheese.
Serve your cucumber boats immediately, or chill before serving if desired.
