In a large mixing bowl combine the cottage cheese, sour cream, cream of chicken soup, garlic salt, and onion powder.
Add the cottage cheese mixture to the slow cooker with the chicken and potatoes. Cover and cook on low for 4-6 hours until the potatoes are fork-tender.
Stir in 1 cup of shredded cheese and half of the chopped scallions.
In a separate medium bowl combine the crushed crackers with the melted butter and remaining shredded cheese and scallions.
Sprinkle the cracker mixture over the top and place the lid back on for 15-20 minutes until the cheese is melted. Serve!

I’ve used sharp cheddar cheese and cottage cheese for this recipe. Depending on what you have at hand, you can experiment with other kinds of cheese too.Cream cheese, ricotta cheese and mozzarella cheese are all great options.I’ve used a can of cream of chicken soup to add some extra creaminess and savory flavor to this million dollar chicken casserole. You can choose to opt for cream of mushroom soup instead too.For some extra garlic flavor, you can also add some garlic powder or onion powder into the chicken mixture and into the crushed Ritz crackers mixture.If you’re planning to use cream cheese for this recipe, I would recommend using softened cream cheese instead of the refrigerated version.
