This Slow Cooker Corned Beef Hash is hearty, comforting, and so easy to make! Perfect for busy days when you want a warm, flavorful dinner with minimal effort.
Preheat the slow cooker on HIGH. Chop the onion into small pieces. Wash the carrots, potatoes, and leeks. Cut carrots and potatoes into bite-sized pieces (½ inch). Slice the leek lengthwise, then finely slice. Place all vegetables in the slow cooker.
Pour the beef stock or broth evenly over the vegetables in the slow cooker.
Sprinkle the salt and black pepper over the vegetables. Stir well to mix everything together. Cover the slow cooker with the lid and cook for 3 hours. Stir halfway through. When done, check that the vegetables have absorbed the liquid and ensure the temperature is at least 145°F.
Cut the corned beef into bite-sized chunks. Heat the oil in a frying pan. and add the corned beef.
Brown the corned beef until slightly crispy (about 5 minutes).
Mix the browned corned beef into the slow-cooked vegetables. Serve hot, with optional toppings like a fried egg, horseradish, or mustard. Enjoy!
