Cool off with these tropical Coconut Pineapple Popsicles! Bursting with the creamy goodness of coconut milk and the sweet, juicy flavor of pineapple, these popsicles are a refreshing treat that’s perfect for hot summer days.
Peel and core the pineapple, then cut in smaller pieces, so it fits the blender.
In the blender, add the cut pineapple, can of coconut milk, the juice of 1 lime and honey. Blend until you get a smooth liquid.
Pour the pineapple juice over your popsicle mold.
Place a popsicle stick in each popsicle mold. Freeze for at least 6 hours before serving.

Freezer Time: Remember to allow these pineapple popsicles at least 6 hours of freezer time, ideally overnight. Doing this will ensure that the popsicles are frozen solid, just the way they should be.Lime Juice Addition: I have added some lime juice to the popsicle mixture to brighten up this frozen dessert and make it more healthy. If you want, you can also add some lime zest to it to enhance its taste.Full-Fat Coconut Milk: Remember to use full-fat coconut milk for this recipe- this will ensure that the popsicles have a nice and creamy taste.Removing Popsicles: If you're having trouble getting your popsicles out, you can dip the mold in a bowl of hot water for just a few seconds and then get them out.Molds Type: You can use any kind of molds for this recipe. I like to use the silicone ones that don't need me to use any popsicle sticks- they come with their in-built plastic sticks.
