Elevate your seafood game with these Instant Pot Lobster Rolls! Tender, juicy lobster tails are effortlessly cooked to perfection in the Instant Pot and then piled high into soft, buttery rolls. With a touch of mayo and a sprinkle of fresh herbs, these lobster rolls are the ultimate indulgence, perfect for a special occasion or a luxurious treat any day of the week.
Place 1 cup of water into the Instant Pot. Sprinkle in your old Bay seasoning with the water.
Cut a slice down the back of your lobster tails using kitchen shears or a sharp knife. This will make opening the tail easier once cooked.
Place the trivet inside the Instant Pot, and then add your lobster tails upside down on the trivet. If you don't have a trivet you may use a steamer basket.
Close the Instant Pot lid by twisting the lid on. Close the valve by pushing it away from you. Set your Instant Pot to high pressure for 4 minutes.
Once the cooking process is complete the Instant Pot will beep. Perform a quick release of the pressure before removing the lid.
While your lobster tails are cooking, mix all of the Lobster roll ingredients in a medium bowl (mayonnaise, fresh lemon juice, parsley, salt, pepper, and butter).
Remove your lobster tails from the Instant Pot with tongs and transfer to a cutting board.
Cut open the Lobster shells from the tails and remove the lobster meat.
If using four lobster tails cut those into pieces and add to your mayonnaise mixture.
If using ½ lobster and ½ crab meat, add the crab into your mayonaise mixture then mix well.
Add your Seafood mixture to your hotdog roll. Top with fresh parsley, or lemon wedges as a garnish. Enjoy!
