Chop your potatoes into chunks and boil them for 10-12 minutes until tender. At the same time, boil an egg for your deviled egg “eyeballs.”
In a blender, combine cream cheese (or crème fraîche), milk, chives, tarragon, and parsley.
Blitz until smooth and creamy. Set aside a small amount of this herby puree for the deviled eggs.
Once the potatoes are boiled, drain the water and mash them until smooth.
Stir in the herby puree, saving a small spoonful for the eggs, and mix until the mash turns a bright green. Add salt and pepper to taste.
Peel the boiled egg and slice it in half. Scoop out the yolk, and mix it with a teaspoon of mayo and the reserved herby puree to turn it green.
Spoon the mixture back into the egg whites to make your deviled eggs. Place an olive slice on top of each for the eyeballs.
Place the green mashed potatoes in a serving bowl and top with the spooky eyeballs.
Notes
Use Fresh Herbs for Vibrant Color: Opt for fresh parsley, chives, and tarragon to achieve that bright, natural green color in your mash. The fresher the herbs, the more vibrant the hue!
Don’t Over-Boil Potatoes: Keep an eye on the potatoes while boiling to avoid them becoming waterlogged. This ensures a better texture when mashed.
Making Monster Deviled Eggs: If you don't have olives with pimento, slice the olive thinly and add a tiny piece of red bell pepper inside to create a blood eye effect.
