Instructions
Slice red bell pepper, green bell pepper, and onion into strips. Layer the crockpot with the chicken thighs, sliced veggies, and taco seasoning.
Cover with the jar of salsa. Stir well.
Cook on low for 4-5 hours or on high for 2-3 hours. Remove the chicken thighs and shred them with 2 forks.
Stir back into the veggies in the Crockpot.
Serve on tortillas with shredded cheese.
Top with sliced jalapenos, lime juice, and sour cream and enjoy.

Choose Your Salsa:
Use your favorite brand of salsa.
Chicken Substitution:
If you would like to use boneless chicken breasts, you may need to adjust the cooking time to ensure that they do not dry out.
