Instructions
Trim off the dark green tops and the root end of the leek.
Slice the leek lengthwise and rinse under running water to remove any dirt or sand between the layers.
Chop the leek into 1-inch pieces.
Boiling Method
Place the chopped leek in a small pot and add just enough water to cover them. Bring to a boil, then reduce the heat and simmer for about 10-15 minutes until the leek is very tender.
Steaming Method
Place the chopped leek in a steamer basket over boiling water. Cover and steam for about 10-15 minutes until the leek is very tender.
If boiled, drain the leek and reserve a little cooking water.
Transfer the cooked leek to a blender or use an immersion blender directly in the pot.
Add the broth and blend until smooth. If needed, add a little reserved cooking water or more broth to achieve the desired consistency.
Season with salt and pepper to taste. Adjust seasoning as needed.
Notes
For a richer flavor, you can add a small clove of garlic to the boiling or steaming water.If you prefer a bit of texture, blend only half of the mixture and mix it with the unblended portion.
