Stir together the regular Oreo cookies, cream cheese, and peppermint extract.
Use an ice cream scoop to form the mixture into balls.
Place the balls on a baking sheet and pop into the refrigerator to chill for at least one hour.
When the balls have hardened, dip each ball in melted chocolate.
Once fully covered transfer the truffles to a piece of parchment paper.
Sprinkle crushed peppermint candy on each of the balls.
Allow the chocolate to cool and harden before serving.
Serve immediately or keep chilled in the fridge for later.

I have used white chocolate chips as the coating for the truffles, but if you don't have those, you can use white candy melts or vanilla almond bark too.If you want to go a step further beyond the regular Oreos and get some more peppermint flavor to these truffles, you can choose to use peppermint Oreos or mint Oreos for the Oreo mixture.I like to melt the almond bark or the candy canes in a double boiler.While you can always transfer the Oreos in a Ziploc bag and crush them using a rolling pin, I like to go the easy way, and just dump them all in a food processor and blitz them. Using a food processor is better in my opinion, because it gets the Oreos into the perfect fine crumbs.If you use a food processor to crush Oreos and turn them into cookie crumbs, you'll need to make sure you don't process it too much, or they'll end up turning into fine powder.Remember to use softened cream cheese while making these Oreo truffles. This will help you shape the truffle balls easily.If the chocolate coating your Oreo cookie balls hasn't turned into a nice shell, you can add a bit of coconut oil to the melted chocolate.If you want to make these Oreo cookie balls quicker, you can pop them in the freezer until they are solid, then coat them in the melted chocolate, and then freeze them again.
