Instructions
Preheat oven to 350°F (175°C). Place Brie on a parchment-lined baking sheet or in a Brie baker. Make shallow slits on top and insert garlic slices.
Drizzle honey over the Brie, letting it seep into the slits. Drizzle with olive oil.
Top with rosemary sprigs. Bake for 15-20 minutes, until the center is soft but not melted completely.
Let Brie cool for a few minutes, then serve warm with sliced baguette or crackers.
Notes
Let the Brie sit at room temp for 20 minutes before baking.
Use a shallow Brie baker or small cast iron pan to contain melty cheese.
Watch closely in the last 5 minutes—it can go from gooey to goo-blob fast.
