Instructions
In a large bowl, beat eggs. Then add cooked bacon, cottage cheese, tomato, spinach, swiss & salt & pepper. Stir until well combined.
Pour the egg mixture into a 9 inch pie plate or prepared baking dish.
Preheat oven to 350. Cook for 30-35 minutes until the center is cooked through.
Garnish with fresh parsley and serve while warm or cool to room temperature. Enjoy your bacon egg casserole!
