Start your morning off right with these delicious Vegan pumpkin Waffles! Crispy on the outside and fluffy on the inside, these waffles are made without dairy or eggs but are still packed with flavor. Top them with your favorite fruits, syrup, or a dollop of dairy-free whipped cream for a breakfast that’s both satisfying and plant-based!
In a medium size bowl add the pumpkin puree, oat milk, coconut oil and sugar. Whisk until well combined.
Then add the flour, baking powder, baking soda, salt and cinnamon to the same bowl and whisk until well combined and smooth.Heat your waffle iron to medium high heat and spray with non-stick spray.
Add about ⅓ cup batter to the iron. Let it cook for about 3-4 minutes.
Repeat until batter is done. Serve with your favorite toppings. Enjoy!

Remember to grease your waffle iron with some vegan butter or melted coconut oil to keep the waffle batter from sticking to the waffle maker.If you don’t have melted vegan butter and don’t wanted to use melted coconut oil, you can just spray some cooking spray on the waffle iron.Remember to follow the waffle iron instructions carefully and use a greased waffle maker to make sure the waffles come out perfect. You can also try making vegan Belgian waffles with the same mixture by using a Belgian waffle iron.Another great idea is to use a mini waffle maker to make these easy vegan waffles for kids.I used cane sugar to sweeten the waffle mixture, but you can also use some pure maple syrup or brown sugar instead.Chocolate chips can also be a great addition to the waffle batter.I also like to add a dash of vanilla extract to waffle batter to balance out all the flavors.
