Toasted Almond and Cranberry Bark is a delicious, crunchy treat with a perfect blend of sweet, nutty, and fruity flavors, drizzled with rich chocolate.
Add the almonds to a skillet over medium heat. Spray lightly with oil and sauté the almonds, stirring frequently, until they are toasted just barely brown.
In a microwave-safe bowl, melt the vanilla bark according to the instructions on the package.
Prep a baking sheet or large cutting board with a large sheet of parchment paper. Spread the melted bark across the entire sheet of parchment. Make sure the melted bark is spread evenly for a consistent thickness.
Before the bark hardens, sprinkle the dried cranberries and cooled almonds across the entire surface of the vanilla bark. Set aside to allow the bark to cool and harden. In another mixing bowl, melt the chocolate bark according to the instructions on the packaging.
Once the chocolate has melted, let cool for 3 minutes and then drizzle across the entire surface of the bark generously. I like to use a small whisk to drizzle the chocolate.
Again, let the drizzle completely cool and harden. Gently break the bark into pieces ranging 3-5” in size. Enjoy immediately or wrap for gifting.
