Roasted asparagus gets a flavor boost with crispy bacon and creamy goat cheese. So simple, yet so delicious! This easy side dish is perfect for busy weeknights or special dinners.
Set your oven to 425°F (220°C) and line a baking sheet with parchment paper for easy cleanup. Heat a skillet over medium heat and cook the chopped bacon until it’s crispy and golden brown. Use a slotted spoon to remove the bacon and set it aside, leaving the flavorful grease in the pan.
Toss the asparagus in the hot bacon grease until it's evenly coated. You don’t want to cook it—just make sure every stalk gets a good coating for extra flavor. If needed, take the pan off the heat to do this more easily.
Spread the asparagus out in a single layer on the prepared baking sheet. Sprinkle crumbled goat cheese evenly over the top.
Bake for 10-12 minutes, or until a knife slides easily through the thickest part of the stalk. Keep an eye on it—overcooked asparagus can turn chewy and stringy.
Remove from the oven and season with salt and pepper. Sprinkle the crispy bacon over the top.
