In a small bowl, mix together the Cajun seasoning, oregano, salt, and black pepper. Lightly sprinkle the mixture on both sides of the chicken, reserving any remaining seasoning for later use.
Set the electric pressure cooker to the “sauté” setting and allow it to heat until hot. Add the olive oil and let it heat for about 10 seconds. Place the chicken in the pot and sear until it is golden brown on both sides. Remove the chicken from the pot and keep it warm.
Add the chopped onion, bell pepper, and celery to the Instant Pot. Cook for about 6 minutes, stirring frequently to prevent burning. Add the garlic and cook for another minute until it is fragrant.
