Give a fresh, creamy twist to a classic favorite with these Avocado Deviled Eggs! Rich avocado is blended with the yolks, creating a smooth and flavorful filling.
Add eggs to a medium pot, and fill halfway with water. Boil over medium high heat for 10 minutes, then turn off the heat, and cover for 10 minutes.
While eggs are cooling, chop the cilantro, and cut avocados in half. Use a spoon to get the avocado out of the shell, and add to a mixing bowl.
Add the lime juice and smoked paprika to the bowl, and use a fork to mash it all together.
After the eggs have set for 10 minutes, rinse eggs in ice and cold water (notes above), then peel. Slice eggs in half lengthwise, adding the cooked yolks to the avocado mixture. Mix together.
Use a piping bag or spoon to add the avocado mixture to the egg halves. Sprinkle with a pinch of paprika, and chopped cilantro. Chill until ready to serve.
Notes
If you don’t have the lime juice that the recipe calls for, you can use lemon juice instead. To add flavor to the mixture with the avocado and egg yolks, you can add some garlic powder, cayenne pepper, bagel seasoning or just some salt and black pepper. If you want the mixture to have a spicy kick, you can mix in some chili powder or hot sauce.
