2Bell Pepperssliced into thin strips, any color (red, green and orange peppers are great)
1Red OnionSliced Thinly
4TablespoonsOlive Oil
4TablespoonsFajita Seasoning
Garnish
1TablespoonCrumbled Cotija Cheese
1TablespoonSour Cream
1TablespoonDiced Cilantro
Instructions
Pre-heat the air fryer at 400ºf. You can also choose to grease the chicken with some olive oil or cooking spray.
Place the sliced chicken, peppers and sliced red onion into a large bowl, coat with 4 tablespoons oil and season with 4 tablespoons of fajita seasoning.
Make sure everything is evenly coated with the fajita seasoning mix. You can also squeeze a bit of lime juice to bring in some extra tanginess.
Add the fajitas to the air fryer basket without over filling. If you have a smaller air fryer, you might want to cook the chicken fajitas in two batches or more if needed.
If you're starting off with a whole chicken breast, you might want to cut it into thin slices to cut down the cooking time.
Cook each batch for 10 minutes, tossing halfway. Remove and let rest for a couple of minutes.
If your chicken strips are thicker, you may want to check if the internal temperature reaches the recommended guidelines, and adjust the cook time accordingly.
Warm the tortillas and add a spread of sour cream. Add the fajitas, and top with cheese and cilantro, serve with some lime wedges and enjoy!
Notes
The cooking time for raw chicken will be different than the cooking time for frozen chicken. If you're confused, just check if the chicken reaches an internal temperature of 165 degrees Fahrenheit and it will be safe to eat! Additionally, you can check if the juices run clear when you cut into the chicken. That's a sure sign that it's cooked properly. Happy cooking!
