Most people know that desserts aren’t really my thing that’s why I love this easy, gluten free chocolate cake. I typically leave the desserts to something simple like these Dairy Free, Triple Berry Pops. Or I’ll leave it to the experts like Jenni from The Urban Poser with her amazing Citron Tart.

A couple years ago when we put Arthur on GAPS,  he could’t tolerate coconut or almond flours so I went in search of some kind of cake I could make for his birthday. I knew, no matter what, it had to be flourless. This cake was a result of that quest & inspired by a recipe from Martha Stewart. As time has moved on, we know that Arthur can now tolerate coconut (HOORAY!) but actually doesn’t tolerate cacao (BOOOOO). Either way, this is still a dessert I love to make as I adore chocolate myself & not only can you leave it naked, you can top it with powdered sugar, coconut cream or fresh berries. And it’s so versatile & rich, a small piece is enough to satisfy.

How to prepare my gluten free chocolate cake

INGREDIENTS

  • 1 cup Raw Cacao Powder
  • ½ cup Coconut Oil + extra for greasing pan
  • I cup Maple Sugar, divided
  • 6 Eggs, separated
  • ¼ teaspoon Salt
  • 1 teaspoon Vanilla

INSTRUCTIONS

  1. Preheat oven to 350.
  2. Oil a 9 inch spring form pan & line with parchment paper.
  3. Using a double boiler (or a glass bowl over a pot of water) stir together the coconut oil with the cacao powder over simmering water. Remove the double boiler from heat but allow the chocolate to stay semi warm. Once the coconut oil returns to room temperature it can solidify & you need it to stay liquid (but not hot!).
  4. In a large bowl, using a hand mixer, whisk egg yolks, salt & ½ cup maple sugar 2-3 minutes until thick & pale.
  5. In another bowl with clean beaters or a stand mixer, beat egg whites on medium speed, until they are foamy. Then, slowly add the other ½ cup of maple sugar from the edge of the bowl into the egg whites. Beat until you have soft peaks.
  6. Now you’ll combine the warm (but not hot!) chocolate with the vanilla & egg yolks.
  7. Use a spatula to mix until the chocolate is well combined.
  8. Next, fold the egg whites, divided into thirds, into the chocolate mixture. Gently fold until well combined.
  9. Pour batter into your prepared spring form pan & bake 40-45 minutes until a toothpick inserted into the middle comes out clean!
