Summer is the perfect time to simplify our cooking. When summer hits & the kiddos are home, simplicity becomes the name of the game. This gives me a lot of opportunities to create fresh side dishes & low maintenance salads.
We especially love tossing together a quick tuna salad because it’s easily eaten at home but it’s also perfectly portable! Consider wrapping your curried tuna salad up in steamed collard leaves for a fun wrap if you aren’t going to just dig in with your fork (like I do!).

Now we all know & love a traditional, deli style, tuna salad but around here, we like to make things interesting. Being such a fan of curry I knew I had to make a curried tuna salad & the cashews + golden raisins are a perfect complement!
How to prepare curried tuna salad

- 1 can Safe Catch Tuna
- ¼ cup Mayo
- ¼ cup Cashews (coarsely chopped)
- ¼ cup Golden Raisins
- 1 rib Celery (chopped
- 2 teaspoons Curry Powder
- Salt to taste
- Open & drain your can of Safe Catch tuna.
- In a medium sized bowl, add all ingredients except salt.
- Mix until thoroughly combined.
- Salt to taste.
