Ingredients For Citrus Honey Roasted Beets

Here are the ingredients needed for this roasted beets recipe:

How To Roast Beets In The Oven (Roasted Beetroot)

Here are the step by step instructions for making fork tender honey roasted beets.

Step One: Preheat Oven

Preheat the oven to 400 degrees

Step Two: Prepare And Chop Beets

Wash and scrub your beets. Cut off the tops and tails and then peel the skin. You’ll need a good vegetable peeler to peel beets like this good grips swivel peeler! Chop your beets into bite-size cubes or slices.

Step Three: Saute Shallots

In a cast iron skillet or an Instant Pot, saute the shallots in olive oil. Add the cubed beets and coat well with a little olive oil.

Step Four: Add Honey And Juice

Cover the beets with honey, lemon and orange juice. The orange will give a beautiful citrus flavor.

Step Five: Roast Beets

Take the skillet from the stovetop to the oven & roast for 30 minutes until the beets are soft and fork-tender. The beets should cook evenly, however, if any of the beets are not yet soft continue roasting for a further five minutes.

Step Six: Garnish And Serve Roasted Beets

Remove the skillet from the oven and let cool slightly before topping with crumbled goat cheese, fresh thyme or dill and reserved zest. Serve warm with a drizzle of sour cream.

You’ll have the best beets and the glaze gives them added sweetness perfect for dinner.

Can I Use A Sheet Pan To Roast Beetroot?

Yes, In this recipe we use the skillet on the stovetop and the oven. However, you can also use a sheet pan to roast beets.

Just preheat the oven to 400F, arrange cubed beets on a greased baking sheet and bake for 30 minutes or until fork-tender. You’ll get the perfect sheet pan dinner.

How To Roast Beets In The Air Fryer

You can also make roasted beets in the air fryer! Simply preheat the air fryer to 400F and spray with a little cooking oil.

Place chopped beetroots in the air fryer basket, sprinkle with salt and pepper and cook for 12 minutes or until fork-tender. No need to add any additional oil as the beets will naturally release their own as they cook.

Can I Roast Canned Beets?

Yes, you can roast canned beets. However, the texture and flavor will not be as good as fresh ones. To get the best result, drain canned beets & pat them dry before roasting.

You may need to reduce cooking time by about 10-15 minutes since canned beets are usually cooked before being packed in a can.

Can You Freeze Roasted Beets?

Yes, you can freeze roasted beets. Allow the roasted beets to cool completely before freezing in an airtight container or freezer bag.

The frozen roasted beets will last for up to six months in the freezer. When ready to enjoy just thaw and reheat in a 375F oven until heated through. Enjoy!

Do I Have To Use Thyme As A Garnish For Honey Roasted Beets?

No, you can use any fresh herbs you fancy. Simply add whatever chopped fresh herbs you have to hand.

Substitute For Lemon

If you don’t have lemon juice, you could use a tablespoon of balsamic vinegar or apple cider vinegar instead. This will give a different flavor profile, but it works well.

Do I Have To Use Shallots?

Shallots make this recipe great but if you do’t have any to hand their are plenty of substitutes you can use.

Do I Need Parchment Paper For Roasting Beets?

No, you don’t need parchment paper for roasting beets. However, it can help make cleanup easier and prevent sticking.

If you are using a sheet pan to roast the beets instead of a skillet, then I recommend lining the sheet pan with parchment paper before adding the ingredients.

How To Roast Beets In Foil

You can also roast beets in foil. Preheat the oven to 375F, tear off a large piece of aluminum foil and place the cubed beets on top.

Drizzle with olive oil, honey, orange juice and lemon juice. Fold up the sides of the foil to create a packet and seal tightly. Bake for 30 minutes or until the beets are tender.

Open the foil packet carefully and serve with your favorite garnishes. these are the tin foil sheets I like to use.

The AAP statement says, "Raw or unpasteurized honey (Infants younger than 12 months should avoid all sources of honey)." AAP Pediatric Nutrition Handbook. Please use your own discretion when feeding your children honey. A substitute for pure maple syrup would be acceptable for this recipe.
