You guys. Two things about this post. First, who knew my husband had such good looking hands?? Way to go, babe! I’m officially using these images as the beginning of your hand modeling portfolio. Secondly, I feel a teeny bit guilty actually packaging this dish up & calling it a ‘recipe’. This one pan sausage, potatoes & peppers dish is so simple but so delicious. Like, I made it & ate it two days in a row & not a single soul complained. I have 4 children, did I mention that? When’s the last time you made dinner for your kids & didn’t hear a single complaint. Exactly.
So, we all know. School is in session. Everyone & their mom is playing a night time sport. The last thing I want to do is cook on most nights but I’m doing it anyway because apparently I have to keep feeding these hooligans. This one sheet dinner is your saving grace. Yes, I put it in a beautiful baking dish to take this picture but for every single other occasion, I literally just toss the baking sheet on the table & stand back. Serve this with a side salad or a simple side of rice. Then pat yourself on the back for making such an outstanding meal that didn’t take any brain power whatsoever (not that I manage to have much left after having 4 children).
One Pan Sausage, Potatoes & Peppers
- 3 Bell Peppers, sliced
- 1.5 lbs New Potatoes, washed & quartered
- 5-6 Mild Italian Sausages, cut in half
- 3 Tablespoons Olive Oil
- 1 Tablespoon Salt
- Preheat the over to 400.
- On a parchment lined baking sheet, assemble peppers & potatoes.
- Coat vegetables with olive oil.
- Place cut sausages on top.
- Sprinkle with salt
- Bake in over for approx 1 hour, turning sausages over at the halfway point.
